fix(nixos): route UxPlay audio directly to ALSA on sunken-ship 🔊

Browse source 
Drop PipeWire (WirePlumber fails to detect ALSA cards without a
graphical session). Use GStreamer alsasink with plughw:USB,0 to
output directly to the Scarlett Solo.
